


How far have you come, and how far do you have to go?? I know I have lost about 20 lbs by what the scale tells me, but I can’t see it…until now. I saw this awesome idea for weight loss jars and I can’t wait to do it. I am making my own jars this weekend! I will put 20 stones in the jar that says, “Weight Lost” and 45 stones in the jar that says, “Pounds to Go”. I can’t wait to hear that sweet ping of success when I drop a stone in my, “Weight Lost” jar!

This week two of my friends and I are going to sign up for a local “Biggest Loser” competion. Will we win? Hell yeah! (we hope, because we heard there were prizes). But even if the unforseeable happens and we don’t make it to the spotlight where they hand the beautiful winners flowers and a crown, (there better be a crown) I’ll be happy to work with my friends to fight the fat and feel good about ourselves. What does a good weight loss team need before all else? A good name of course! We have decided (until we change our minds again) to call our team “Mission Slimpossible”.

Healthy Baked Southwest Egg Rolls
INGREDIENTS
2 cups frozen corn, thawed
1 (15 oz.) can black beans, rinsed and drained
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
2 cups shredded Mexican cheese blend
1 (4 oz.) can diced green chiles, drained
4 green onions, chopped
1 tsp. ground cumin
½ tsp. chili powder
1 tsp. salt
½ tsp. pepper
¼ tsp. cayenne pepper
1 package egg roll wrappers (about 24 total)
DIRECTIONS
In a large bowl, combine everything but the egg roll wrappers. Mix well to blend. Lay an egg roll wrapper out on a work surface so that one of the corners is pointing toward you and place ¼ cup of the filling in the center. Fold the tip closest to you up over the filling, roll a bit, then take the points pointing outward and fold them in toward the center. Continue rolling into an egg roll shape until a small part of the remaining point is still free. Dip a finger in water or beaten egg and lightly brush on the edges of the free corner. Finish rolling and press to seal closed. Repeat with the remaining wrappers and filling.
Preheat the oven to 425˚ F. Lightly oil a baking sheet with cooking spray. Place the sealed egg rolls on the baking sheet seam side down and spray the tops of the egg rolls with cooking spray. Bake for about 15 minutes, or until lightly brown, turning halfway through baking. Serve warm with salsa.

This website has instructions on how to take you from nearly no pushups to doing 100 consecutive pushups in only 30 minutes a week for 6 weeks. I’m definitely giving this a try!
Today I set out to run on the treadmill for an hour. I planned on starting the couch to 5K running plan from Taralynn’s Undressed Skeleton, which I will add to the next post. I have never ran on the treadmill for an hour but I was pumped to give it a shot. My amazing husband lovingly took control of the girls and kicked me out the door. :-) I planned on staying on the treadmill for an hour alternating walking one minute and running one minute. The first minute flew by and I knew I could do more! So I did. I ran for 18 minutes straight at 5.0 at a 1.0 incline. The 60 minute on the treadmill was broken down as follows. Run 18, walk 2 (at 3.0 at 1.0 incline), run 15 minutes walk 5, run 5 minutes walk 5 minutes, run 5 minutes walk last 5 minutes. My goal for next week is to run 18 minutes walk 2, run 15 minutes walk 5 minutes, run 15 minutes walk 5. Eventually I’d love to be one of those beautiful Amazonian women running for the full 60 minutes. I’ll get there!
I looked around and noticed that I was one of the smaller girls in there. Believe me, this dosn’t happen very often. I was really happy to see the girls who are on the bigger side there sweating it out there with me. It got me thinking. What do these girls think about being there?
Here are just some fat free food for thought. Don’t be intimated by your size if you’re bigger than you’d like to be. For starters you’re in the right place to change it, and you’ve already taken the hardest step; showing up. Secondly, don’t worry what everyone else is thinking. Even if they’re staring I’d bet good money no one is thinking anything as bad as you are imaginig they’re thinking. When a person who is a little on the heavy side is working it out at the gym people do tend to stare. Maybe they were there one day themselves and they are nostalgically recalling what if felt like, and are proud of themselves for how far they’ve come. (You’ll be there one day yourself.) Then there’s the people who may have never I been there themselves but are damn proud of you for being there and taking charge of you own life. There’s of course the people there who have been running for a few minutes and are just staring off in space while while thinking about nothing in particular. If you do come across someone who is malicious, toss the a smile then forget about them. They can’t be feeling happy in their own lives right now. Don’t judge anyone by the way they are looking at you, by the way. It’s hard to look like Miss/ Mr. Congeniality while you’re covered in sweat, have a bright red face, and out of breath.
I’m just getting back into running after having my baby three months ago. I could have started six weeks after delivery, but it just didn’t feel right. I’m not saying to be a couch potato and lean back on the excuse of, “I don’t feel like it today.”. But do trust yourself and listen to your body. Be thoughtful and conscious when getting back into the good fight after something traumatic like having a baby or going through surgery. Find your limits and give them the finger as you run past them.

This picture was taken about 3 weeks after I had my second daughter Kaydance. I weighed about 200 lbs. That’s not exactly something I’m proud of. So now I’m going to do something I am proud of. I am going to lose weight, get healthy, and damn near sparkle. (Keep your Twilight jokes to yourself.) My goal weight is 135 lbs. I think the last time I weighed 135 I was 16 years hold. Today my daughter is 3 months old and internally a switch has been hit. I have lost some weight since that picture was taken, but this is only the beginning. My intention for this blog is to bring my story outside of myself. I will post pictures, recipes, workout routines and tips, even if I am the only one who reads this blog.
Today was the first time in a really long time that I worked out at the gym and lifted weights. I forgot how much I missed it! Here is a breakdown of what I did.
Warm up-
Ran a half of a mile on the treadmill (it was cold outside okay!) at a 1.0 incline at 6 mph.
To the weight room-
Hip abductor 6 sets of 15 and one set of 10 at 110lbs. That’s 100 total reps.
Hip adductor 6 sets of 15 and one set of 10 at 110lbs. Another 100 reps.
Leg press 6 sets of 15 and one set of 10 at 90lbs.
Then I repeated it. 100 more hip abductors, 100 more hip adductors and 100 final leg presses.
I did a half mile cool down on the treadmill to finish it off.
It sounds like a ton of reps (and it is) but I loved it! That many reps becomes an aerobic activity because my heart rate was high and I had to keep breathing deep and steady to get through each set.
Today was important to me because it’s the first step in the right direction.
